Go Goat for Home-Made Pizza

Hello all, for those new and returning, welcome! This is the second week that Healthy Chews is up and running and I’m very excited about this week’s recipe.

This week we are going to be making homemade super hardy whole wheat thin crust personal pizzas. These pizzas are loaded with fresh organic veggies and topped off with herb and garlic goat cheese. I decided to make my own fresh pizza tomato sauce since the prepackaged kind is usually filled with preservatives, high levels of sodium, and other chemicals.

Okay, so let’s get started!






Pizza Ingredients

Preperation Time: 15 minutes
Cook Time: 15-25minutes
  • 1 Package of Whole Wheat Lebanese Styled Pitas 
  • 1 Medium Red Bell Pepper, diced 
  • 1 Medium Green Bell Pepper, diced 
  • 1 1/2 Medium Yellow Onion, diced 
  • 4-5 White Mushrooms, cut into 1/2-inch slices 
  • 1 Zucchini, cut cross-wise into 1/4-inch slices 
  • 1-3 Bushles of Kale, chopped loosely 
  • A Handful of Sun-Dried Tomatoes, diced 
  • 1 Small Package of Herb & Garlic Goat Cheese (130g), crumbled 
  • Ground Sea Sale and Pepper for taste 

Tomato Pizza Sauce Ingredients
  • 4 Ripe Plum Tomatoes, seeded removed
  • 3 Cloves of Garlic
  • 1 1/2 of a Medium Yellow Onion, diced
  • 1 Jalapeno
  • 1 Can of Tomato Paste
  • 2 Tablespoons of Extra Virgin Olive Oil
  • 1 Tablespoon of Dried Oregano
  • 1 Tablespoon of Dried Rosemary
  • Ground Sea Sale and Pepper for taste
Special Equipment Needed
  • 1 Circular Pizza Stone; This is highly recommended to make crust crispy
  • 1 Food Processor; Used to blend the pizza sauce
  • 1 Pizza Wheel; Used to cut pizza into slices

Directions:

The first step is to preheat your oven to 450°F, this may take anywhere from 5-15minutes, depending on your oven. Next, we will want to fire up the food processor for the homemade tomato pizza sauce.


Next, plug in your food processor to the nearest outlet, and place 4 of the shelled out ripe plum tomatoes into the processor. Throw in the remaining ingredients needed for the sauce into the food processor. (1 half of a yellow cooking onion, 1 jalapeno seeds in, 3 cloves of garlic, the contents of the can of tomato paste, 1 tablespoon of oregano, 1 tablespoon of rosemary, and 2 tablespoons of extra virgin olive oil.) Switch your food processor on to purée, this will liquify your ingredients into a rich sauce ready to be spread on your pizza.

* it is important to note that this sauce is a bit spicy from the jalapeno pepper, this was a personal preference, feel free to remove or add the jalapeno pepper to this recipe.

Once the sauce has been blended and it consistant, place one of the Whole Wheat Lebanese Styled Pitas onto the Circular Pizza Stone, this will be the crust of the pizza. Now it's time to add the homemade tomato sauce to the pita, spread the sauce across the pita, make sure to leave a 1/2 inch along the edges to give your pizza a crust.

The next part comes the fun part; dressing up the pizza! Start layering your toppings, I'd suggest starting with the flatter ones such as the zucchini and mushrooms, then sun dried tomatoes, peppers and onions. Finally, top off your pizza with the kale bunches and sprinkle the crumbled goat cheese on top. Feel free to be generous with layering your cheese, more cheese is better cheese! Feel free to ground some sea salt and pepper for personal taste. Once your pizza is oven ready, your pizza will look something like this:

Pop in your pizza into the oven, and let it cook for 15-25minutes. Each oven is different, so keep checking to see if your pizza is done. Some signs that your pizza is ready; the crust will brown and become crispy, and the goat cheese will be a bit gooey. It is important to note that goat cheese does not melt like the more common cheeses such as mozzarella or cheddar.

Once your pizza is ready, take it out of the oven and let it cool for about 5 minutes. Once cooled, slice your personal pizza into slices and it is ready to serve. Using a pizza wheel makes this process easier, but a knife works too if you do not have one.
