Dark Chocolate Peanut Butter Bites

Rolled Oats with Dark Chocolate, Peanut Butter & Flax Seed
This week at Chews Healthy, I was itching to make another dessert. As a connoisseur of peanut butter, it was a no brainer to make these delicious balls of goodness. This recipe is packed with rolled oats, ground flax seed, organic raw honey, peanut butter, and dark chocolate. What's not to love, seriously?

Since this blog is dedicated to health, it is important to note that although all of the ingredients in this recipe are healthy for you, it's not recommended to eat a full batch of these in one sitting! They are recommended to eat in place of an energy or granola bar.

This recipe is super easy to make as it requires no baking or cooking. Simply mix, roll, indulge. Anyways, let's get started!


Yield: 12-15 Bites
Prep Time: 10-15 minutes
Cook Time: 0 minutes
Ingredients:
  • 1 Cup of Rolled Oats
  • 1/4 Flax Seed, ground
  • 1/4 Teaspoon of Cinnamon
  • 1/3 Cup of Smooth Peanut Butter
  • 1/4 Cup of Organic Raw Honey
  • 1/2 Cup of Peanuts, crushed
  • 2 Tablespoons of Semi-Sweet Dark Chocolate

Directions:

1.) First, warm up the peanut butter and organic raw honey. For simplicity, I used a microwave for about 30 seconds, this will make the ingredients soft and easier to mix later. Let peanut butter and honey cool for a couple minutes.

2.) Next, in a mixing bowl combine the rolled oats, ground flax seed, cinnamon along with the peanut butter and honey. Stir well until the ingredients become consistant. Next, add in the semi-sweet dark chocolate and continue to mix well. 

*It is important to note that if you the mixed ingredients are too warm, it will melt the chocolate. Be sure to let the mixed ingredients cool before adding in the chocolate.

3.) Next, roll the dough into small golfball-sized balls. The dough should yield  about 12-15 balls, depending on how large you decide to make them. 

4.) Once, all of the dough is rolled into balls, place the crushed peanuts into a bowl or plate. Gently, roll each of the peanut butter bites into the crushed peanuts until they are covered evenly.

5.) These Dark Chocolate Peanut Butter Bites can be eaten at room temperature, but are ideal severed cold.

  2. I made a couple of substitutions:steel-cut oats, 100% Peanut crunchy peanut butter, and for lack of unsalted peanuts, rolled 'em in more oats!

    It's a great, easy recipe. I just eyeballed all the measurements and they turned out great! Thanks!
